How can I see what ports/protocols are actually being used for "Various" traffic? I have a large amount of traffic in this channel and have no idea of what it is.

Hi,
you might have a look at this article which explains the various traffic. You would have to create custom channels resp. a custom netflow sensor to get rid of the various entries.
