Is this about the PRTG Server itself or about the monitored servers? You can pause all sensors in PRTG by right-clicking on the Root Node and select "Pause". All monitoring will be paused until you resume it. You can also select "Pause | One-time maintenance window" and define a timeframe for pausing sensors.

In case you only want to stop monitoring for certain devices, you can do the same at any level (single devices, device groups etc.), either pause indefinitely until you resume or by setting a one-time maintenance window.

Kind regards.
