If I have a map with a 365 graph of a Pages Printed Total sensor is it possible to somehow display the difference between those values thus showing the total number of pages printed for the period of the graph?

Dear dreniarb

This is not possible, because the SNMP Printer sensors shows an absolute value (total number of pages) not a delta (pages per second/hour/day.) The total difference in a report is only computed for sensors using a delta counter, like SNMP traffic.
