My question was answered by PRTG support team.
It is not recommended to force a manual update.
Once the Core Server has been updated to a new version, all Remote Probes will no longer be able to connect to the Core Server.
At this point, I refer to the PRTG manual "How Probes Work"
https://www.paessler.com/manuals/prtg/remote_probes_and_multiple_probes
"If the connections between core and probe fails for any reason (for example, a reboot of the computer running the core server) the probe continues its monitoring and stores the results.
During a connection loss a buffer stores a maximum of 500,000 sensor results in RAM memory of the remote probe system (up to 50 - 200 MB).(...)"
The problem at this point is that the remote probe is not able to reconnect to the core server until the update is installed.
To complete the update, a restart of the PRTG probe service is required.
This restart clears the contents of the RAM and thus deletes the meantime stored monitoring data.
So there is no reasonable possibility for a forced manual update of the remote probe. -_-"
If you only want to change the number of simultaneously updating remote probes, the following link could be useful.

Special Thanks to Mr. Saure from the German Paessler Support team for his fast reply.
